Peanut Butter Blondies
These are amazing, peanut buttery, yumminess even the raw dough is like cookie dough!
They do contain sugar, honey and peanut butter, but as a nice little healthier treat they work great. Easy to make, but be careful they are addictive!
They contain complex carbohydrates in the oats and wholemeal flour, so a nice slow release energy, but the honey and sugar will give a quick release energy (so great pre training) and the peanut butter adds some healthy fats and protein too, happy days!
Peanut Butter Blondies
Makes approx 20 slices
Ingredients
1 cup of peanut butter
half cup of unrefined brown sugar
quarter cup of honey
2tsp vanilla extract/essence
1 cup oats
1tsp baking powder
1 cup wholemeal plain flour
quarter tsp salt
half a cup skim milk or milk of choice – you will probably need a little more too
Method
- preheat oven to 180 degrees, line a 8×8 baking tray with grease proof paper.
- Mix the honey, sugar and peanut butter together until smooth
- add the vanilla, mix well
- add the milk, flour, oats and baking powder, mix well, it will be a thick dough, you will need to knead it to bring it together, add more milk until you get a dough that can be pressed together.
- Press the mixture lightly into the baking tray and bake for 15-20 mins, keep an eye on it, until just lightly browned.
- Allow to cool and cut into approx 20 pieces, 2 pieces per portion.
