Watermelon Breakfast Pizza
Get the kids away from eating sugary cereals and encourage them to eat some more fruit with this yummy Fruit Breakfast pizza.
Watermelon is packed full of vitamins, including vitamins A ( important for the immune sytsem, vision and reproduction), B6 (for a healthy nervous system) and C (anti oxidant and helps the body maintain healthy bones, blood vessels and skin). It also contains Lycopene a powerful anti oxidant and as the watermelon is around 92% water it is also hydrating. Team this with some yogurt for added protein and calcium, and some seeds for healthy fats makes this is great way to start the day.
Fruit Breakfast Pizza
Serves 4
Ingredients
1 watermelon
150g fat free greek style yogurt
2tsp vanilla essence
2 kiwi fruit sliced
80g strawberries stalks cut off and sliced
80g raspberries halved
2 nectarines sliced
2 handfuls of blueberries
1tbsp sunflower seeds toasted
1tbsp pumpkin seeds toasted
Method
- Mix the vanilla and yogurt together.
- Cut 4 round slices from the centre of the watermelon so you get 4 “pizza” bases about 1.5cm thick. Slice each round into 4.
- In a dry frying pan add the seeds and dry fry for 1-2 minutes or until they turn slightly golden.
- Spread each piece of watermelon with the yogurt and arrange the fruits on top, add the toasted seeds and serve.
