Oat, Date and Peanut butter Biscuits
No added sugar or honey, just sweetened with some yummy dates, nice slow release carbohydrates from the oats and good fats and protein from the peanut butter makes these little biccies a perfect afternoon pick me up.
Makes 16 biscuits
Ingredients
3/4 cup of oats
1/4 natural peanut butter
12 pitted dates
half tsp vanilla essence
3-4 tbsp water
Method
- preheat oven to 180 degrees, line a baking tray with grease proof paper.
- Add the oats, dates, peanut butter and vanilla to a blender/food processor and blitz until you get coarse crumbs.
- Keep the blender/food processor on and add 3-4 tbsp water, one at a time, until a dough forms.
- Make into 15 small balls and flatten out on the baking tray, bake for 10 minutes or until golden, you can cook for longer if you prefer them crunchy or shorter if you prefer them a bit more softer.
