Cajun Steak Tacos

Ingredients
1tbsp of cajun spices
1tsp olive oil
2 wholemeal tortillas/wraps or 4 small ones
200g of sirloin steak **To make this veggie use Quorn strips or even some halloumi cheese cut into strips.
1tsp olive oil
1 onion sliced
1 red pepper sliced
1 yellow pepper sliced
half a tin of kidney beans drained and rinsed
2 handfuls of shredded iceberg lettuce
2tbsp fresh coriander chopped
2tbsp philly light
Method
- preheat the oven to 200c. brush the wraps/tortillas with the oil. Scrunch 2 pieces of tin foil into cylinder shape and fold the tortillas/wraps around the foil, to make a taco shape/bowl. Lay them on a baking tray and bake for 8-10 mins, keep an eye on them so they don’t burn!
- Rub the cajun spices into the steak, add the other tsp oil to a non stick frying pan and cook the steak until ready, 1-2 mins on each side or longer depending on how you like it. Remove from pan and set aside, add the peppers and onions to the same pan and cook for 5-6 mins, add the steak back in and add the kidney beans and cook for 2 mins.
- To serve divide the lettuce between the crispy tortilla/wrap, add the beef and pepper mixture and top with the philly and coriander and eat!
