Cheese & Onion Oat Bites

Kind of like a savoury flapjack, sounds an odd combo but trust me it tastes awesome! Great as a snack or even as a grab and go breakfast. Packed full of slow release carbs and magnesium from the oats, vitamin A, Vitamin C, Vitamin K, vitamin B8 and folate from the carrots, bit of protein from the eggs and cheese and you have a great all round healthy snack.

Serves 16

Ingredients

150g oats

150g 50% less fat cheddar cheese – Asda

1 egg

1 egg white

half an onion diced finely

2 teaspoons mustard

175g grated carrots

Method

  1. Preheat the oven to 180c or gas mark 4. Line a 20cmx20cm tin with greaseproof paper.
  2. Mix the carrots, oats, cheese and onion together in a large bowl.
  3. Whisk the egg/egg white and mustard together, season well and add to the oat mixture, mix well until all combined.
  4. Put the mixture in the baking tray and flatten out, pressing down as you go, bake for 25 minutes or until golden, remove from oven and let cool, cut into 16 pieces with a sharp knife.
