Lamb Kofta and Greek Salad

One of my most fave dishes, so so tasty, i’d happily munch through a bowl of the greek salad on its own! But when teamed with the lamb it just all works so well.

I don’t normally have the pitta as everything else is so tasty, but if you are training/running or lead an active lifestyle then add the pitta in.

Lamb Kofta and Greek Salad

Serves 2

Ingredients

250g Minced lamb

small bunch parsley washed and chopped

quarter tsp cinnamon

quarter tsp mixed all spice

1 garlic clove – crushed

1 green pepper chopped

1 yellow pepper chopped

4-5 tomatoes chopped

200g of light feta cheese – I used Apetina Light – chopped into small squares

half a cucumber chopped

15 olives chopped

half tsp oregano

1tsp olive oil

2-3tbsp white wine vinegar

Wholemeal pittas to serve

Method

  1. Preheat oven to 200 degrees C
  2. Mix the lamb with the parsley, spices and garlic and make into 10 small sausage shapes, lay onto a wire rack over a baking tray and put in the oven for 20 minutes, turning halfway.
  3. Meanwhile add the peppers, tomatoes, cucumber, olives, feta oregano, oil and vinegar to a large bowl and mix well.
  4. Warm the pittas through and serve with the lamb koftas and the greek salad.
