Fish Burrito Bowls
Fresh, tasty flavours. Fish is a great source of low fat protein. Brown rice for slow release energy, combined with some fresh tomatoes, beans and spices make this a great balanced dinner. Which is super quick and easy to make.
Fish Burrito Bowls
Serves 4
Ingredients
30g pp dry weight brown basmati rice or half a packet of microwave brown/basmati rice per person
1tsp garlic salt
2tsp paprika
2tsp ground cumin
4 basa fillets halved or any from white fillets
2tsp olive oil
1 can of black beans drained and rinsed
small tin of sweetcorn
200g tomatoes chopped
half a red onion finely diced
15g parsley chopped
2 baby gem lettuces washed and separated into leaves
1 lime cut into 4
Method
- Cook the rice if using dry rice.
- Mix the garlic salt, paprika and cumin together, sprinkle over the spice mix onto the fish on both sides and rub in.
- Heat the oil in a non stick frying pan and cook the fish 3-4 minutes on each side, you might need to do this in 2 batches depending on how big your pan is!
- Cook the rice if using microwave rice and add to a saucepan, add the beans & sweetcorn and heat gently, mix well and season.
- Mix the tomatoes, onions and parsley together and season.
- Slice the fish, divide the rice between 4 bowls, add the fish, tomato salsa and a squeeze of lime and serve with the lettuce leaves. I mix everything up and pile it on the lettuce leaves and eat!
